Ingredients

- 1/2 cup old-fashioned rolled oats
- 1 tablespoon chia seeds
- 1/2 ripe pear, skin on, finely diced
- 1 cup low-fat milk or fortified unsweetened soy milk
- 1/4 teaspoon ground cinnamon, divided
- Pinch of kosher salt
- 1/3 cup low-fat cottage cheese
- 1/2 teaspoon vanilla extract
Method

Combine the oats, chia, pear, milk, half the cinnamon, and salt in a small saucepan. Bring to a gentle simmer over medium heat.

Cook 5 to 7 minutes, stirring often, until the oats are tender and the chia has thickened the milk.

Blend or vigorously whisk the cottage cheese with vanilla and the remaining cinnamon until creamy.

Spoon the oatmeal into a bowl and swirl the cottage cream over the top.
