  • 1 teaspoon neutral oil
  • 8 ounces cremini mushrooms, finely chopped
  • 1 small zucchini, finely diced
  • 1 cup shelled edamame, thawed
  • 1 tablespoon white miso
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon toasted sesame oil
  • 1 1/3 cups cooked jasmine rice
  • 2 scallions, thinly sliced

Method

    Whisk the miso, soy sauce, rice vinegar, ginger, sesame oil, and 2 tablespoons water in a small bowl.

    Heat the neutral oil in a wide skillet over medium-high. Add the turkey and cook, breaking it into small crumbles, for 5 to 6 minutes.

    Add the mushrooms and zucchini. Cook 4 minutes, until their moisture evaporates and the turkey begins to brown.

    Stir in the edamame and miso mixture. Cook 1 to 2 minutes, until glossy and hot.

    Divide the rice among four small bowls or cups. Spoon the turkey mixture on top and finish with scallions.
