Cucumber boats filled with lemon-herb chicken, hummus, and feta

  • 6 ounces cooked chicken breast, finely chopped
  • 1/2 cup plain hummus
  • 2 tablespoons crumbled feta
  • 1 tablespoon chopped fresh dill or parsley
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • Pinch of kosher salt and black pepper

Method

    Halve the cucumber lengthwise. Use a teaspoon to scrape out the watery seeds, leaving a sturdy shell. Cut each half crosswise into two boats.

    In a bowl, stir together the chicken, hummus, feta, dill, lemon zest, lemon juice, salt, and pepper.

    Spoon the filling firmly into the cucumber boats. Chill for 10 minutes if time allows, then serve two boats per person.
