  • 4 medium bell peppers, halved lengthwise and seeded
  • 1 pound 93% lean ground turkey
  • 1 teaspoon extra-virgin olive oil
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1 cup no-salt-added black beans, rinsed and drained
  • 3/4 cup mild salsa, plus more for serving
  • 1/2 cup shredded reduced-fat cheddar
  • 2 tablespoons chopped cilantro or scallions

Method

    Heat the oven to 400°F. Arrange the pepper halves cut-side up in a 9-by-13-inch baking dish. Add 1/4 cup water to the dish, cover with foil, and bake for 10 minutes.

    Meanwhile, heat the olive oil in a skillet over medium-high. Add the turkey and cook, breaking it into small crumbles, until no pink remains, 6 to 7 minutes.

    Stir in cumin, paprika, oregano, salt, black beans, and salsa. Cook 2 minutes, just until the mixture is cohesive and hot.

    Drain any water from the pepper dish. Divide the filling among the pepper halves and top with cheddar.

    Bake uncovered for 10 to 12 minutes, until the cheese melts and the peppers are tender. Finish with cilantro or scallions.
