  • 1 medium yellow onion, diced
  • 3 medium carrots, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 1/2 cups dry red lentils, rinsed
  • 1 can (14.5 ounces) no-salt-added diced tomatoes
  • 6 cups low-sodium vegetable or chicken broth
  • 3/4 teaspoon kosher salt, or to taste
  • 1 tablespoon lemon juice, optional
  • 1/4 cup chopped parsley

Method

    Warm the olive oil in a soup pot over medium heat. Add the onion and carrots with a pinch of salt; cook 6 to 7 minutes, until softened but not browned.

    Add the garlic, cumin, and smoked paprika. Stir for 30 seconds, until fragrant.

    Add the lentils, tomatoes, and broth. Bring to a boil, then reduce to a steady simmer and partially cover.

    Cook 20 to 25 minutes, stirring occasionally, until the lentils collapse and the carrots are tender.

    Blend about one-third of the soup with an immersion blender, leaving some texture. Season with salt and optional lemon juice, then finish with parsley.
