- 1 teaspoon extra-virgin olive oil
- 2 ounces cooked lean turkey breakfast sausage, crumbled
- 1 packed cup baby spinach, roughly chopped
- 1 large egg
- 1/2 cup liquid egg whites
- 1/3 cup low-fat cottage cheese
- 1 tablespoon chopped fresh chives
- 1/8 teaspoon garlic powder
- Pinch of kosher salt and black pepper
Method

Warm the olive oil in an 8-inch nonstick skillet over medium heat. Add the turkey and cook for 1 to 2 minutes, until hot and lightly browned.

Add the spinach and cook just until wilted, about 30 seconds. Reduce the heat to medium-low.

Whisk the egg, egg whites, garlic powder, salt, and pepper in a small bowl. Pour into the skillet and stir slowly with a silicone spatula, sweeping the bottom and sides.

When the eggs are softly set but still glossy, fold in the cottage cheese. Cook 30 to 45 seconds more; the curds should stay creamy rather than dry.
